Bonjour Cheesy Apple French Toast


I love Wednesday. Simply for What I Ate Wednesday. But I hate Wednesday. Because it is the start of my work week. Wednesday, Thursday, Friday. 3 days = 36 hours in the ER. Man I am going to be one tired nurse at the end of this week! But let's jump right into this WIAW!

 So the premise of this idea?? 

Each Wednesday on youtube I will show you 3 "best of" meals that I had during some point this week. It will always be a 1 breakfast, 1 lunch, 1 dinner and maybe sometimes a snack or desert! You will VOTE all week long under that video for what recipe you want to see right here on the blog.

So.... the winner this week is:

Bonjour Apple French Toast
modified recipe from CookingLight


Serious Nom Noms

Non-Food Items
A large bowl
Whisk/fork
1 medium Skillet
1 large skillet
Non-Stick Spray
Measuring Cups
Measuring spoons

Ingredients
(6 servings - each serving is 2 slices of French Toast)

1/4 cup store bought apple cider
1 tsp cornstarch
2 tsp I Can't Believe It's Not Butter Light!
2 cups thinly sliced McIntosh Apples (about 3 small apples)
3/4 cup Sugar Free Pancake Syrup
12 slices of Ciabatta bread (about 1 oz per slice)
3 oz thinly sliced Gruyere cheese
1/2 Cup Unsweetened Almond Breeze
1/3 cup of our Special Buttermilk
1/4 tsp salt
1/8 tsp nutmeg
1/8 tsp black pepper
1 Large Egg
1/4 Cup Egg Whites
1/2 T Cinnamon
6 tsp I Can't Believe It's Not Butter Light! (divided up into 2 tsp sections)
3 T toasted pecans broken up

Directions

1. Preheat oven to 250 degrees.
2. Combine cider & cornstarch by mixing well and then setting aside. 
3. Melt 2tsp  Can't Believe It's Not Butter Light! on pan and add in cider mix, apples, and pancake syrup. Make sure to throughly coat apples.
4. Bring this mixture to a boil, stirring frequently. Occasionally, flip apples to cook all around.
5. Reduce heat and let apples get soft (2-3 minutes)
6. Take this skillet and place it in the pre-heated oven to keep warm.
7. Next, combine Unsweetened Almond Breeze & our Special Buttermilk with the salt, nutmeg, pepper, egg, and egg whites. Mix throughly with whisk in large bowl.
8.  Take 2 tsp I Can't Believe It's Not Butter Light! and melt it on the large skillet. 
9. Spray rest of skillet with non stick spray. 
10. Use milk mixture as to coat both sides of the Ciabatta bread.
11. Place 2 pieces of coated Ciabatta on skillet to cook til brown (about 3-4 minutes per side).
12. Place 1 piece of French toast on plate, top with half ounce of the thinly sliced Gruyere cheese and then place 2nd piece of French toast on top.

** Right now it will kind of be like a french toast grilled cheese sandwich and you can even place plated French Toast in the oven w/ Apple Mix just make sure the plates are oven proof**

13. Complete steps 8 - 12 with remaining Can't Believe It's Not Butter Light! and Ciabatta bread
14. Once all French Toast is made evenly place apples on french toast.
15. Approx. 3 T of sauce will be drizzled on each plate.
16. Place 1.5 tsp broken pecans on top of each plate and sprinkle that cinnamon!
17. ENJOY!

  2. Oh my that apple french toast looks amazing. Cooked apples are seriously the best thing ever, so on french toast I bet they are even better. I'm going to have to make this sometime.
